INGREDIENTS:

  • 3 or 4 packages of ready-made roast beef
  • 4 large whole onions, halved
  • 4 large carrots cut into chunks
  • 4 celery ribs cut into 1" pieces
  • 1 small bag of frozen peas
  • Olive oil or butter
  • Salt, pepper and garlic powder to taste

Sauce INGREDIENTS:

  • 2 small cans of tomato paste
  • 4 tbsp of instant coffee
  • 3 tsp of red pepper flakes
  • 2 14oz of dark Irish beer and basil sprigs
  • 1/4 cup of brown sugar

DIRECTIONS for stew:

  1. Prepare all veggies ahead in the usual mode you like to cook them in. You may use olive oil or butter, plus salt and pepper to taste.
  2. Set aside separately in the fridge for later, after cooking or baking them.
  3. Prepare roast beef according to package directions.
  4. You may add garlic powder after it is cooked if you wish.

DIRECTIONS for sauce:

  1. In a medium-sized sauce pan, add tomato paste, coffee granules, red pepper flakes and beer.
  2. Cook on medium heat, keep stirring to blend ingredients.
  3. You can also add 1/4 cup of brown sugar to sweeten the sauce, if you wish.

Assembly of stew:

  1. In a very large casserole dish, place meat in the middle.
  2. Add veggies around it.
  3. Add sauce over it.
  4. Heat on 350 to heat through completely.
  5. Take the dish out of the oven.
  6. Garnish with fresh basil or rosemary sprigs.
  7. *Optional: You may also add cooked red and green pepper strips if you desire even more color
